Pulled Pork Lion’s Mane Recipe

It's a hearty and satisfying alternative, to be honest I think it’s a bit nicer than using pork, its more juicy and the mushroom flavour goes really well with the richness of the BBQ sauce, not to mention it cooks loads quicker. You can use shop bought BBQ sauce but to be honest I think they’re all too strong and overpowering and there’s nothing like your own.

(serves two)

For the Lion's Mane:

300g lion's mane mushrooms, cleaned and torn into strips

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon brown sugar

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon liquid smoke (optional, for extra smokiness)

For the BBQ Sauce:

250g BBQ sauce (store-bought or homemade)

1 tablespoon apple cider vinegar (optional, for tang)

1 teaspoon Worcestershire sauce (or vegan alternative)

To Serve:

Burger buns or sliders

Coleslaw (optional)

Pickles (optional)

 

Method

Prepare the Lion's Mane:

In a large bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, brown sugar, salt, black pepper, and liquid smoke.

Add the torn lion's mane mushrooms and toss until well coated.

Cook the Lion's Mane:

Heat a large frying pan over a medium-high heat. Add the seasoned mushrooms and cook for about 10-15 minutes, stirring occasionally, until they are golden brown and tender.

Add the BBQ Sauce:

Reduce the heat to low and stir in the BBQ sauce, apple cider vinegar, and Worcestershire sauce. Let it simmer for about 5-10 minutes, allowing the flavours to meld and the mushrooms to absorb the sauce.

Serve:

Pile the pulled lion's mane on burger buns or sliders. Top with coleslaw and pickles if desired. Enjoy!

Tip

Additions: Feel free to add other toppings like avocado, jalapeños, or your favorite sauces.
