Bang Bang King Oyster Mushrooms

Inevitably a lot of mushroom recipes are from Asia simply because they eat a lot of mushrooms, it also means the recipes have been perfected over the years. This dish is traditionally a meat dish, deriving its name from the Chinese word for stick, used to bash the meat to tenderise it. Makes perfect sense, the name brings a smile to my face and so does the taste.

Ingredients

(serves four)

Ingredients

  • 300g King Oyster mushrooms, cleaned and sliced into thick strips

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

    For the Bang Bang Sauce:

    • 200g cup mayonnaise (or vegan mayo)

    • 2 tablespoons sweet chili sauce

    • 1 tablespoon sriracha (adjust for spice level)

    • 1 teaspoon lime juice

    • 1 teaspoon garlic powder

      For Garnish:

    • Spring onions, sliced

    • Sesame seeds

    • Fresh coriander (optional)

 

Method

Prepare the Sauce:

In a bowl, combine the mayonnaise, sweet chili sauce, sriracha, lime juice, and garlic powder. Mix well until smooth. Adjust the heat and sweetness to your preference.

Cook the Mushrooms:

Heat the olive oil in a large frying pan over medium-high heat. Add the sliced King Oyster mushrooms and season with salt and pepper. Sauté for about 5-7 minutes, or until the mushrooms are turning golden brown and tender.

Coat the Mushrooms:

Once cooked, remove the mushrooms from heat and drizzle some of the Bang Bang sauce over them, tossing to coat evenly.

Serve:

Plate the mushrooms and drizzle more Bang Bang sauce on top. Garnish with sliced green onions, sesame seeds, and fresh coriander, if using.
