Lion’s Mane Burger
Lion’s Mane Mushroom burger
I love a burger, its quick and easy, I’ll have it for breakfast, it’s like a cross between a chicken burger and a fish burger. One of these sets me up for the day and I’m convinced it make me think clearer!
Ingredients
(serves one)
One big fat slice of lion’s mane mushroom
A knob of best butter
A couple of slices of fresh tomato and red onion
Some crisp lettuce
A big, soft bread bap
Method
Melt the butter in a frying pan, add the slice of lion’s mane and season well. Fry the slice on both sides until it starts to caramelise. It will absorb the butter like a sponge then will go juicy. Keep going until it’s a lovely golden colour (about 5-6 mins).
Now whack it into the bap with the tomato, lettuce, onion and a splash of tomy ketch.
You can add cheese or BBQ sauce, but personally I like a dash of green chilli sauce.
Either way it’s bloody lovely!
