Lion’s Mane Mushroom Satay Skewers
I really like finger food, especially with a dip or two. There’s something a bit Henry VIII, no knives and forks, greasy fingers, drippy juice over my lips and tossing the stick over my shoulder with a hearty laugh before tucking into more.
Ingredients
(serves two)
Ingredients
1300g Lion's Mane mushrooms, cleaned and torn into large pieces
1 tablespoon olive oil or coconut oil
Salt and pepper, to taste
Skewers (soaked in water if using wooden skewers)
For the Marinade:
3 tablespoons soy sauce
2 tablespoons peanut butter
tablespoon maple syrup or honey
1 tablespoon lime juice
1-2 teaspoons sriracha or chili paste (optional)
2 cloves garlic, crushed
1 teaspoon grated ginger (optional)
Method
Prepare the Marinade:
In a bowl, whisk together soy sauce, peanut butter, maple syrup, lime juice, sriracha, garlic, and ginger until smooth.
Marinate the Mushrooms:
Add the Lion’s Mane mushrooms to the marinade and toss to coat. Let them marinate for about 30 minutes, too long and everything gets a bit soggy.
Preheat the Grill or Oven:
Preheat your grill to medium heat or put a large non-stick frying pan on to heatup
Skewer the Mushrooms:
Thread the marinated mushroom pieces onto the skewers.
Cook the Skewers:
Grill the skewers for about 3-4 minutes on each side, or until the mushrooms are golden and slightly charred. Or if you are using a non stick frying pan cook for about 7-10 minutes, turning to brown evenly, its tricky if your skewers stick over the sides.
Serve:
Remove from heat, season with salt and pepper to taste, and serve with your favourite dipping sauce or alongside rice and veggies.
Dipping Sauce (Optional):
Mix equal parts soy sauce and peanut butter with a splash of lime juice and a sprinkle of chili flakes for a tasty dipping sauce.
