Fried Chicken-Style Oyster Mushrooms Recipe

You can guess where the influence comes from for this dish. To be honest I’m always disappointed with the Colonels stuff - too greasy. These on the other hand fit the bill, crispy, juicy and spicy. Keep the mushrooms whole and you’re in for a treat. I like experimenting with my breading mixture in the hope to end up with my very own secret mixture of herbs and spices. This one is not far off.

Ingredients

(serves four)

For the Mushrooms:

  • 500g oyster mushrooms, cleaned and trimmed

  • 250ml buttermilk (or a non-dairy alternative)

  • 1 teaspoon hot sauce (optional)

    For the Breading:

    • 200g plain flour

    • 1 teaspoon paprika

    • 1 teaspoon garlic powder

    • 1 teaspoon onion powder

    • 1 teaspoon salt

    • 1/2 teaspoon black pepper

    • 1/2 teaspoon cayenne pepper (adjust for spice level)

For Frying:

    • Sunflower oil for frying 

 

Method

Marinate the Mushrooms:

In a bowl, combine the buttermilk and hot sauce. Add the cleaned oyster mushrooms, ensuring they are fully submerged. Let them marinate in the refrigerator for at least 30 minutes.

Prepare the Breading:

In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

Heat the Oil:

In a deep frying pan, heat about 2-3cm of oil over medium-high heat. You can test if it's ready by dropping in a small amount of flour; it should sizzle immediately.

Bread the Mushrooms:

Remove the marinated mushrooms from the buttermilk, letting the excess drip off. Dredge each mushroom in the flour mixture, coating thoroughly. Shake off any excess flour.

Fry the Mushrooms:

Carefully place the breaded mushrooms in the hot oil, working in batches to avoid overcrowding. Fry for about 3-5 minutes, or until golden brown and crispy. Use tongs to turn them halfway through for even cooking.

Drain:

Remove the fried mushrooms from the oil and place them on a plate lined with paper towels to drain excess oil.

Serve:

Serve your fried chicken-style oyster mushrooms hot, with dipping sauces like ranch, hot sauce, or aioli.
