Pink Pot Noodle

This is super quick and easy for a lunch. Use any veg but it’s important to slice them as thin as possible. Try and find the Chinese noodles that come in a packet, they are very cheap and with the mushrooms and veg, one packet is enough. 

Ingredients

(serves two)

100g  pink oyster mushrooms

1tbs sunflower oil  

Chopped garlic and ginger

100g thinly sliced veg (carrots, celery, onion etc)

1 ltr stock made with a veggie stock cube

1 tbs soy sauce

1 packet of noodles (the pack with a sachet)

 

Method

Heat the oil in a medium saucepan then add the garlic and ginger.

Fry for a minute then add the veg and mushrooms and fry for a further 3-4 mins. 

Now add the stock and soy sauce when it’s boiling add the noodles (don’t use the sachet) and simmer until the noodles are cooked, about 3-4 mins. 

Serve in bowls with a fork ’n spoon and a napkin (I usually end up with it dribbled all down my shirt).
