Oyster Mushroom Ceviche

A lot of people are funny about mushrooms, most of it is down to their texture. Well this dish is all about the texture. I know it's usually a fish dish but try it, like me you will be surprised.

Ingredients

(serves four)

  • 200g oyster mushrooms, cleaned and sliced very thinly

  • 1 lime

  • 120g red onion, finely chopped

  • 1 medium tomato, finely diced

  • 1 avocado, finely diced

  • 1 small cucumber, finely diced

  • 1-2 jalapeños, finely chopped (adjust for heat)

  • 100g fresh coriander, chopped

  • Salt and pepper, to taste

  • Tortilla chips or lettuce leaves (for serving)

 

Method

Marinate the Mushrooms:

In a bowl, combine the sliced oyster mushrooms with lime juice. Ensure the mushrooms are fully submerged. Let them marinate in the refrigerator for about 30 minutes to 1 hour. The acidity of the lime juice will "cook" the mushrooms.

Combine the Ingredients:

After marinating, drain some of the excess lime juice if desired (to your taste). Add the chopped red onion, diced tomato, avocado, cucumber, jalapeños, and coriander to the bowl.

Season:

Gently toss everything together. Season with salt and pepper to taste. Adjust lime juice or add more coriander if desired.

Serve:

Serve the ceviche chilled, either on its own, with tortilla chips, or on lettuce leaves for a fresh wrap.
