Oyster Mushroom Bhaji Recipe
You know when you go for curry and you (or someone else) order a load of stuff you’ve never had before and it’s all lovely and you think to yourself “why haven't I ordered this before?”. Mop this one up with a Naan.
Ingredients
(serves two)
400g oyster mushrooms, cleaned and chopped
2 tablespoons oil (vegetable or coconut)
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 onion, finely chopped
2-3 cloves garlic, crushed
1 teaspoon ginger, grated
1-2 green chilies, chopped (adjust to taste)
1/2 teaspoon turmeric powder
1 teaspoon garam masala
Salt, to taste
Fresh coriander, chopped (for garnish)
Lemon wedges (for serving)
Method
Heat the Oil:
In a large frying pan, heat the oil over medium heat. Add the mustard seeds and cumin seeds. Allow them to splutter for about 30 seconds.
Sauté Aromatics:
Add the chopped onion to the pan and sauté until golden brown (about 5-7 minutes). Then add the crushed garlic, grated ginger, and green chilies. Cook for another 1-2 minutes until fragrant.
Add Spices:
Stir in the turmeric powder and salt. Mix well.
Cook the Mushrooms:
Add the chopped oyster mushrooms to the pan. Cook for about 10-12 minutes, stirring occasionally, until the mushrooms are tender and any liquid has evaporated.
Finish with Garam Masala:
Sprinkle the garam masala over the cooked mushrooms and mix well. Cook for an additional 2-3 minutes.
Garnish and Serve:
Remove from heat and garnish with fresh coriander. Serve with lemon wedges on the side.
