Not Bacon Butty

No I’m not trying to pretend this tastes like bacon because it is just a mushroom sandwich, but cooked like this served in sliced bread it’s as satisfying as a proper bacon butty. You don’t have to be a veggie to enjoy this.

Ingredients

(serves one)

1 king oyster mushroom

1tbs oil or butter 

1 tsp soy sauce or a pinch of smoked salt

2 slices of white sliced bread

 

Method

While you heat the oil or butter in a small frying pan, slice the mushroom lengthways to about the thickness of a pound coin.

Add the slices to the pan and sprinkle on the soy sauce or salt and fry the slices on both sides until they begin to brown and crisp around the edges. 

Layer the mushroom onto one side of your well buttered sliced bread and slap on some tommy ketch or brown sauce. Cover with the other slice of bread… heaven!
