Cheese French Toast with Oyster Mushrooms Recipe
I love a cheese toastie every now and then, especially dipped in some tommy ketch. This is a posher version and a lot more filling. You could cook this in a toastie maker or one of those sandwich toaster thingies - if you can be bothered to get it out of the cupboard. I just use a good non-stick frying pan.
Ingredients
(serves two)
For the French Toast:
4 slices thick bread (sourdough works well)
2 large eggs
120ml milk (or a plant-based alternative)
Salt and pepper, to taste
250g cheese (like cheddar, gouda, or mozzarella), grated
For the Sautéed Oyster Mushrooms:
200g oyster mushrooms, cleaned and sliced
1 tablespoon olive oil or butter
2 cloves garlic, crushed
Salt and pepper, to taste
Fresh herbs (like thyme or parsley) for garnish
Method
Prepare the Mushroom Filling:
In a frying pan, heat olive oil or butter over medium heat. Add the sliced oyster mushrooms and sauté for about 5-7 minutes, or until they are golden brown and tender. Add crushed garlic at the last minute and cook until fragrant. Season with salt and pepper. Set aside.
Make the Egg Mixture:
In a shallow dish, whisk together the eggs, milk, salt, and pepper.
Assemble the French Toast:
Heat the pan again over medium heat. Dip a slice of bread into the egg mixture, ensuring both sides are coated. Place on the pan, then sprinkle a generous amount of cheese on top. Add a layer of the sautéed mushrooms, followed by another dipped slice of bread. Cook for about 3-4 minutes until golden brown. You will need to press the top down with your spatula to really squeeze the two slices together.
Flip and Cook:
Carefully flip the sandwich and cook for another 3-4 minutes until the other side is golden and the cheese has melted.
Repeat:
Repeat the process for the remaining slices of bread.
Serve:
Slice the French toast in half and serve warm, garnished with fresh herbs.
